Yamazaru Junmaishu Hiyaoroshi - Junmai sake from Nagayamashuzou Goumeigaisha, Yamaguchi
Description

Nippon Bare rice polished to 65% is aged through summer as a hiyaoroshi, released in autumn after maturing without a second pasteurization. The single-fire-entry process and extended cellar aging give this junmai from Nagayama Shuzo a mellow, settled character.
