Yamazaru
Founded in 1887 in Yamaguchi Prefecture and recognized by the Ministry of Economy, Trade and Industry as a historic small and medium enterprise of the Chugoku region, Nagayama Shuzo brews its Yamazaru brand with the ambition of making sake that is full-flavored, ages well, and captures the changing of the seasons. The brewery uses locally grown rice including the rare Kokuryo Miyako variety, and its hard water drives complete fermentation to produce a characteristically dry, rich, and robust style. Living with Agriculture is the brewery's guiding motto, and Yamazaru is recognized as a representative rich-taste jizake of Yamaguchi.
