A fukuro-tsuri (bag-pressed) daiginjo from Kojima Sohonten's Toko label in Yamagata, produced by suspending sake-filled cloth bags and allowing the sake to drip freely by gravity without pressing. This gentle extraction yields exceptionally clear, delicate sake with minimal structural stress on the liquid. The fukuro-tsuri technique is one of the most labor-intensive methods in sake production and is reserved for the highest-grade expressions.
