Description
Kijoshu, brewed by replacing part of the water with previously matured sake during fermentation, gives this Tokubetsu Junmai from Sakurai, Nara, a concentrated sweetness and depth. The brewery at the foot of Tanzan Shrine has won gold medals at the IWC for its kijoshu, including a gold and the Nara Koshu Trophy in 2019.
