Tanzan Josen from Nishiuchi Shuzo in Sakurai, Nara, uses Kinuhikari as koji rice polished to 60% and Nara-grown rice as kake-mai polished to 70%, with a sake meter of +4. A moderately dry everyday sake with suppressed aromatics and gentle umami, it rewards warming over a flame.
