The brewery specializes in kijoshu, a richly sweet style brewed by substituting sake for water during fermentation, a technique developed by Japan's National Research Institute of Brewing in 1973. Tanzan's kijoshu earned a Gold Medal at the International Wine Challenge 2021, and the brand also offers cumulative-aged 'rujoshu' variants.
