A junmai ginjo in the Classic style, brewed from Yamada Nishiki at 60% polishing using the yamahaimoto traditional starter method, which takes twice as long as the standard approach. The resulting sake carries a pronounced natural acidity and deep, complex umami that broadens further with warming.
