Description

Takakiya Junmai Daiginjo Yamadanishiki features Japan's most celebrated sake rice, Yamadanishiki, processed to daiginjo standards by the entirely hand-crafted operation of Hamashima Shuzo in Bungo-Ono, Oita. The brewery, which resumed operations in 1997 under direct brewer leadership, grows multiple rice varieties on its own 13-hectare farmland, bringing rigorous agricultural oversight to this prestige expression. High polishing and slow fermentation draw out the clean melon-and-flower aromatics for which Yamadanishiki-based daiginjo is renowned.
