Takakiya Honjozo Takinoshizuku (Waterfall Drops) is produced by Hamashima Shuzo in the mountainous Bungo-Ono district of Oita, a region threaded with rivers whose clean water has long supported sake brewing. As a honjozo, it uses a measured addition of distilled alcohol to sharpen and lighten the palate, bringing the 'shizuku' (drip) freshness of the name to life. The brewery's entirely handmade process ensures this everyday style carries artisanal character beyond its classification.
