Yamada Nishiki and Tama Sakae rice form the base of this super-dry junmai, a style Otani Shuzo has maintained since its founding in Meiji 5. Brewed to a sake meter value of +10, it delivers a pronounced dry finish with the firm body characteristic of the Sanin region.
