Part of the flagship hiragana Takachiyo label series from this Niigata brewery, each release in the line is brewed around a specific fruit concept using precise koji work, fermentation temperature control, and yeast blending. The brewery draws on soft subterranean water from Mount Makihata and polishes all rice in-house using the flat-milling technique.
