Built around Ipponjime, a proprietary rice variety cultivated by Takachiyo's own brewery workers in Niigata's Uonuma valley and developed specifically for greater umami and body, this Junmai Daiginjo polished to 48% delivers vivid, fruit-forward intensity. Bottled as nama genshu, unpasteurized and undiluted, it carries full-weight concentration alongside the refreshing freshness of snowmelt water filtered through mountain springs at the foot of Makihata mountain. Expect vibrant aromatics, a luxurious body that balances sweet fruit depth against clean mineral dryness, and a persistent finish that stays true to Takachiyo's philosophy: free from convention, entirely loyal to place.
