Junmai brewed with the brewery's proprietary Shiragiku rice variety, polished to 65%, from Shiragiku Shuzo in Okayama. The Shiragiku strain was revived from just 55 seeds over a decade, making this one of the world's rarest sake brewing rices; the resulting sake shows a sweet, rounded character with brisk acidity and good structure.
