Yamada Nishiki polished to 40% is brewed as a junmai daiginjo by this Fukushima producer, making use of the prefecture's clean brewing water. Fukushima has won the most gold prizes at the National New Sake Appraisal consecutively, reflecting the high level of ginjo craftsmanship in the region.
