Yamada Nishiki milled to 40% forms this Kariho junmai daiginjo, brewed with medium-hard water from the Omono River at the Kariho kura in Daisen, Akita. The brewery's signature yamahai and sakafune pressing traditions underpin the production of all Kariho ginjo-class sake.
