Kuramitsu's Junmai Daiginjo Sara Tobintori is gathered free-run from suspended cloth bags into tobin casks, a method that captures only the most delicate fraction of the moromi without applied pressure. Produced by Oita City's sole sake brewery since 1864, the Sara line has received consecutive top prizes at the National Sake Competition, and this junmai daiginjo version uses Ono River subterranean water and high-ester yeast.
