The only surviving sake brewery in Oita City and a multiple Gold Award winner at the National New Sake Appraisal, Soukou Shuzo has built its reputation on precise, handcrafted work with locally grown ingredients since its founding in 1864. The Sara Junmai Daiginjo uses Gin no Sato, an Oita-grown sake rice polished to 48%, brewed with subsoil water from the Ono River and a high ester-producing yeast that elevates the aroma well beyond what its junmai classification might suggest. Highly fragrant for the category, with elegant floral and fruity perfume, a clean and light feel, and a refined, graceful finish.
