Tokubetsu honjozo brewed using the kimoto method with Yamada Nishiki polished to 65%, from Sohomare Brewery in Tochigi. Since reviving kimoto brewing in 2001 as part of their Kimoto Renaissance, the brewery has developed a signature style that balances firm acidity with savory umami and a clean, dry finish.
