Description

Sohomare has pursued kimoto brewing since 2001, and this tokubetsu junmai is drawn direct from the cask as a namazake genshu without dilution or heat pasteurization. The kimoto lactic acidity lifts the dense, savory umami of the rice, and the raw sake power in the palate resolves into a firm, clean finish.
