Yamada Nishiki milled to 50% in a ginjo from the Shirasasazutsumi label of Kanei Brewing in Hadano, Kanagawa, a brewery founded in 1868 at the foot of the Tanzawa mountains. The brewery uses deep aquifer water from the Tanzawa range to produce this mid-tier aromatic expression.
