Yamada Nishiki polished to 40% is brewed at this Komatsu City, Ishikawa, brewery using Kanazawa yeast and snowmelt water from the Hakusan mountain range. The sake has received a Yuutou-sho (excellence prize) at the 2024 Kanazawa National Tax Agency sake competition and was once served aboard Japan's first government aircraft.
