Shinkai Junmaigenshu Ginfubuki Kyugo (Silver Snowstorm Junmai Genshu at 90% rice) from Fujimoto Shuzo in Koka, Shiga, is an undiluted pure rice expression using the brewery's soft Yamamura Shrine well water and minimally polished rice, emphasizing raw rice flavor and body over aromatic refinement. The brewery, active since around 1766 in a city famous for the Koga ninja tradition, practices the mizumoto yeast starter method, a revival of Muromachi-era brewing techniques that predate the kimoto by centuries.
