Pressed and bottled without heat treatment or dilution, this junmai genshu (17% ABV) uses organically grown Yamada Nishiki polished to 70% at the Kameoka brewery. Balanced umami and acidity characterize the flavor, with a clean but full-bodied palate that pairs well with food.
