From a brewery in Ushimado, Okayama, founded in 1830, the Senju Josen is the flagship everyday sake in the lineup, brewed with Bizen-area rice and subterranean water from the Yoshii River. The brewery describes the style as neither sweet nor dry, with a persistently food-friendly, mellow character.
