Yume Sansui, an Aichi-developed sake rice with low protein content and a large shinpaku, is polished to 55% for this kasumi (hazy) nama junmai ginjo from Yamazaki Limited Partnership. The variety's clean, refined fermentation quality yields a sake with a fragrant nose and concentrated yet nuanced umami, bottled unfiltered and unpasteurized to preserve the freshness of the new pressing. Yume Sansui's low-impurity profile contributes to the sake's clarity of character.
