Yamazakikamoshi is produced by Yamazaki Limited Partnership, a brewery founded in 1903 in Hazu, Nishio City, Aichi Prefecture, within the Mikawa-wan Quasi-National Park. The Yamazakikamoshi brand was created with the intention of crafting a universally approachable junmai sake using locally grown Aichi Prefecture rice varieties such as Yumeginsui and Yumeginko. The brewery, which has produced the flagship Sonno brand since 1920, draws its brewing water from groundwater at the foot of nearby Mount Mikane.
