Sawahime Tokubetsu Honjozo Namachozoshu is a nama chozo, meaning the sake is stored unpasteurized and only pasteurized once before bottling, preserving a lively freshness. This production method retains vibrant aromatics while allowing flavors to develop through storage maturation. Inomata Shuzo's Tochigi honjozo base lends a clean, slightly dry character that benefits from the nama storage's added vitality.
