Sanintogo Kimoto Junmai Namagenshu Tamasakai uses Tama Sakae rice in a kimoto-fermented unfiltered expression from Fukura Shuzo in Yurihama, Tottori. Founded in 1889, this lakeside brewery specializes in the Izumo toji tradition, using Lake Togo's proximity to shape its food-pairing philosophy.
