Sakuragawa Ginjo is a ginjo-grade sake from Kinsuzume Shuzo in Yamaguchi, made with carefully selected rice polished to ginjo level and fermented at low temperatures to develop the elegant floral aromatics characteristic of this classification. Yamaguchi prefecture's soft, clean water from the Chugoku mountain range supports the delicate fermentation conditions required for ginjo production, resulting in a light-bodied, aromatic sake with a clean finish.
