Aiyama rice from Hyogo Prefecture is polished to 50% for this junmai ginjo from an Ibaraki brewery founded in 1716. The soft mouthfeel characteristic of Aiyama comes through with pear-like aromas, a rounded and mellow palate, and a gentle rice umami that lingers with elegance.
