Honjozo is a category that permits the addition of a small amount of distilled brewer's alcohol, up to 10% of the weight of the rice, a practice that can lift and sharpen aromatics while producing a notably clean, dry finish. Abekan Shuzo, operating continuously since 1716 in Shiogama, Miyagi, carries the Omotaka brand name as its complementary line alongside the main Abekan label, each developed to present a different facet of the brewery's style. Omotaka Honjozo sits in the approachable, everyday register of the brewery's output, designed, per Abekan's core philosophy, to function as a versatile companion to the abundant seafood cuisine of the Matsushima coast. The Date clan's original commission gave the brewery a deep connection to Shiogama Shrine, and that heritage of crafting ceremonial sake survives in the brewery's exacting attention to rice and water quality.
