The Junmai Karakuchi reflects the brewery's guiding philosophy: sake should complement and bring out the best flavors in a meal rather than compete with it. Miyagi Prefecture rice polished to 60% produces a clean, dry profile with mellow rice and almond notes, moderate acidity, and an honest, food-friendly umami that performs equally well alongside seafood, chicken, or braised dishes.
