Okuharima Junmai Fukuroshibori Shikomi No. 29 is a fukurozuri (bag-pressed) Junmai using Yamada Nishiki polished to 55% from Shimomura Shuzoten in Himeji's mountain forests, Hyogo. Fukurozuri (drip-pressing in hanging cloth bags without added weight) extracts only the most refined free-run sake, reflecting this 1884-founded brewery's artisanal, hands-on approach to the pressing stage.
