Description

Tama Sakae rice — a variety associated with Shiga Prefecture — forms the base of this tokusen honjozo from Uehara Shuzo, brewed with spring water filtered through the hills above Lake Biwa's western shore. The brewery, founded in 1862, applies the same kioke tenbin wooden-vat pressing and house-yeast philosophy to this honjozo that defines its junmai and ginjo lineup.
