Aiyama rice, polished to 58%, yields a junmai with a vivid lychee-like aroma and melon-tinged sweetness from Ohmine Shuzou in Yamaguchi Prefecture. Aiyama, sourced from the Special Grade A fields of Hyogo's Yoshikawa region, is one of sake's rarest brewing rices, and here produces a rounded, integrated expression with a crisp, clean finish.
