Ofu junmai ginjo fermented from a blend of Matsuyama Mii and Shizukuhime, two Ehime-grown rice varieties, polished to 60%. Shizukuhime is an Ehime-exclusive sake rice prized for its gentle flavor and umami richness, and together with the local spring water, it gives this ginjo a soft, approachable character.
