Yamada Nishiki polished to 35% in a music-brewed daiginjo from Kanei Brewing, where koji cultures are exposed to Mozart's compositions to enhance fermentation. Tanzawa subterranean water drawn from 150 meters below Hadano, Kanagawa, combines with this extreme polish for a fragrant, romantic aroma and a lingering, fruity finish.
