Miyakanbai Junmai Daiginjo 40% from Kanbai Syuzo in Miyagi is polished down to just 40% of the original grain, removing 60% of the outer rice layers to expose the starchy core and minimize unwanted fats and proteins. This extreme milling level produces an exceptionally delicate, translucent flavor profile characteristic of the finest junmai daiginjo, with the clean water of Miyagi supporting a pure and lingering finish.
