Minamitaiheiyo Daiginjo Koshu from Kisuki Shuzo in Shimane is a daiginjo that has undergone extended aging, developing the caramelized, honeyed depth and deepened color characteristic of koshu while retaining the delicate foundation of daiginjo-grade polishing. Extended maturation in temperature-controlled conditions gradually transforms the bright, fruit-forward aromatics of fresh daiginjo into a richer, more complex flavor profile with notes of dried fruit, nuts, and gentle oxidation.
