Minamitaiheiyo Daiginjo Genshu from Kisuki Shuzo in Shimane represents the most intensely concentrated expression in the Pacific-themed label series, with rice polished beyond 50 percent and bottled undiluted at natural alcohol strength. The genshu format preserves the full weight and aromatic depth of the daiginjo fermentation without the softening effect of water addition, resulting in a sake of higher alcohol content and amplified flavor. Shimane's soft San'in water and meticulous ginjo-grade fermentation management combine to produce a daiginjo of refinement and concentration under the Minamitaiheiyo label.
