Aged in the brewery's Meiji-era earthen storehouse, this matured honjozo develops rounded, mellow umami that the brewery describes as ideally suited to warm serving temperatures. Produced at Matsuoka Brewing in Saitama's Ogawa Town, it draws on limestone groundwater and slow, low-temperature fermentation for its characteristic depth.
