Yamada Nishiki and Hattan Nishiki are both used in this nakadori origarami namazake junmai ginjo from the 27BY vintage. The origarami style retains fine lees in suspension, adding texture and a gentle earthy note to the fresh, unfiltered character of the middle-run pressing.
