ブルゴーニュの白ワインに使われた樽の中で貯蔵されたお酒です。オークの樽に負けないように麹をたくさん使い、通常は2割の麹歩合のところ、こちらは麹歩合を4割まで高め、酸と奥行きの深さを出しました。水と米でどこまでできるかトライしてみたお酒です。1995年がファーストビンテージです。
