This aged junmai from Matsui Sake Brewery, Kyoto, is polished to 55% and given additional cellar time to develop a fuller, more layered character compared to the standard Kyochitose lineup. Brewed with soft Kamo River basin water at a kura founded in 1726, it balances rice-forward depth with a quietly dry, food-pairing finish.
