Kyochitose is produced by Matsui Sake Brewery, one of the very few sake breweries still operating in Kyoto, with a history stretching back to its founding in 1726 in Kasumi Village in Hyogo Prefecture before relocating to Rakuchu, Kyoto, in the late Edo period. The brewery is recognized by the Kyoto Sake Brewers Association under the 'Kyo no Miyako Sake' designation, honoring breweries that embody Kyoto's sake heritage. Kyochitose stands among a rare group of Kyoto brands still crafted in the ancient capital itself.
