Junmai Ginjo genshu (undiluted) at 60% polish, matured through spring and summer before release as a hiyaoroshi single-pasteurized autumn sake at Yukitsubaki Shuzo in Kamo, Niigata. The extended cold maturation rounds the flavor and deepens the rice umami while retaining the brewery's characteristic clean finish.
