Description

Gohyakumangoku and other rice polished to 70% are used for this nigorizake from an Aichi urban brewery following Echigo-style light brewing traditions since 1845. Unfiltered rice solids remain in suspension, giving the sake a creamy texture alongside the variety's characteristic clean finish.

Since I started the sake brewery at Yamada Village at the entrance of Zenkoji Kaido in the second year of Kosa, I have been making handmade sake brewing. As one of the few sake breweries in Nagoya, we have been patronized by local people.
