Kimpai Daiginjo Namazake is an unpasteurized daiginjo from Kimpaishuzou in Hyogo Prefecture, brewed in a region historically celebrated for its Yamada Nishiki rice cultivation and nada-style sake production. The daiginjo grade requires rice polishing to at least 50% remaining, and the namazake status means the sake is released without heat treatment, delivering vibrant aromas and a lively, fresh palate. Hyogo's mineral-rich water supports the clean fermentation that defines this elegant expression.
