
The rice is polished to 40% Yamada Nishiki, a rice suitable for sake brewing from Fukuoka Prefecture. Brewed through slow fermentation. This is a beautiful sake that the brewer hand-stacked in sake bags and squeezed using the gentle power of the ``tank''. It has been created to have a deep taste that harmonizes the calming ginjo aroma and the flavor of rice.
