Okayama-grown Akebono rice polished to 70% yields a honjozo with a quiet, restrained aroma and a medium-bodied palate that holds up equally well served cold or warmed. Produced by a brewery in Akaiwa, Okayama, which has supplied local sake since its founding in the Showa era, using rice cultivated in the prefecture's mild, sun-rich Inland Sea climate.
